SALAD INGREDIENTS: (Serves 6-8)
1 5 oz. pkg of organic Bibb or Boston lettuce
1 5 oz. pkg of pre-washed organic mixed field greens
1/4 small red onion, sliced paper thin (then soak onion slices for 5-10 min. in 3 T red wine vinegar)
1 cup fresh raspberries (or blueberries)
1 cup crumbled feta cheese
1/2 cup toasted slivered almonds
 
SALAD DRESSING:
1/2 cup Mamma Chia Raspberry Passion Drink
2-3 T red wine vinegar
1/4 cup good quality extra virgin olive oil
1 T organic Grade B Maple Syrup
1/4 tsp kosher salt
1/8 tsp cracked black pepper (optional)
Dash of Cayenne Pepper
 
DIRECTIONS:
Place both bags of lettuce and field greens in a large bowl and toss together.   Place a small heap of the lettuce mixture on 6-8 individual salad plates.   Top each salad with several fresh raspberries, crumbles of the feta cheese and slivered almonds.   Add a few slices of the red onion that has been pickled in vinegar to each salad.   Pour all of the salad dressing ingredients into an empty Mamma Chia bottle and shake.   Drizzle 2-3 T of dressing over each salad and serve immediately.   Add salt & fresh cracked pepper to taste.
