For our upcoming Chiamilk Cookbook, our friend Amy Tong (@AmyTong_) shared her delicious take on one of Italy’s most popular and classic dessert dishes. Using Mamma Chia Organic Unsweetened Original Chiamilk and fresh organic strawberries, she created an absolutely salacious (and dairy-free) Strawberry & Chiamilk Panna Cotta!
1 tablespoon unflavored vegatarian gelatin
2 1/4 cup Mamma Chia Organic Unsweetened Chiamilk, divided
1 pound fresh organic strawberries
6 tablespoons sugar (you can substitute with sugar-free sweetener)
1/2 teaspoon vanilla extract
1 teaspoon lemon juice
In a heat proof bowl, dissolve gelatin and 1/4 cup Chiamilk, set aside and let it rest for 5 minutes. Heat the gelatin mixture in the microwave for 30 seconds until gelatin is completely dissolved. Let cool slightly.
In the blender, process strawberries, remaining 2 cup of Chiamilk, sugar, vanilla extract, lemon juice, and cooled gelatin mixture, until smooth. Pour mixture through a fine sieve into a large bowl, discard any solids/seeds.
Evenly distributed into molds or small serving cups. Chill for at least 8 hours, or preferably overnight.
To unmold, dip bottom of the mold in a small bowl of hot water for 5 to 10 seconds, then invert panna cotta onto a dessert plate and remove the mold. Serve with macerated strawberries on top.
If using small dessert cups, simply spoon macerated strawberries on top before serving.
Ingredients for the Macerated Strawberry:
1/2 pound fresh strawberries, sliced
Juice from 1/2 a lemon
1 tablespoon of sugar (or sugar-free sweetener)
Directions to prepare the Macerated Strawberry:
In a medium bowl, gently toss strawberry slices with lemon juice and sugar. Let the mixture steep in room temperature for 15 minutes before serving on top of the panna cotta.

Tiny but mighty, these black seeds are rich in protein, fiber, and omega-3s (which are healthy for the heart, brain, and seemingly everything else). Though popular in smoothies and oatmeal, chia seeds aren’t just for breakfast. Add them to rice pilaf for extra fiber, or use them in a smoky veggie burger as a binder, since they plump up when mixed with wet ingredients. They even take on a nice gel-like texture, making them the perfect thickener for a zesty vinaigrette. Click here to read more!

How exactly does so much joy come from such a tiny seed? Although small in stature, chia is bursting with an immense supply of vitality, energy and strength. It may feel like magic, but the source is no mystery!
Omega-3 is a polyunsaturated fat and considered an essential fatty acid because it cannot be manufactured by the body. For such a tiny seed, chia is quite high in Omega-3, boasting more than 10x the amount of Omega-3 in salmon (when compared gram for gram). Studies have shown that Omega-3 fatty acids work to protect the heart by lowering blood pressure, bad cholesterol and inflammation!
Chia seeds have both soluble and insoluble fiber, which can aid in digestion. The rich fiber content in chia seeds also helps people feel more full quicker!
Research has shown that free radicals play a major role in disease formation and antioxidants reduce the effects of free radical damage, thus protecting healthy cells!
Not only is the protein from chia plant-based, it’s also complete protein (or whole protein)! Complete protein contains the desired proportion of all nine essential amino acids believed to be necessary for the dietary needs of humans!
Calcium + Magnesium
Beyond Omega-3, fiber and protein, chia seeds are also a source of calcium, iron, potassium, phosphorous, magnesium and zinc! When compared gram for gram, chia seeds have 5x more calcium than milk and 15x more magnesium than broccoli!

Janie Hoffman, founder of Mamma Chia, spoke of how when she launched her company in 2010, less than half of the people she met knew of chia. Like Sambazon, Mamma Chia focused on building awareness through a national sampling program with the intent to “have as many souls as possible experience the magic of chia.” Click here to read more!
Within a year of its market debut in 2010, its innovative chia-based beverages were distributed in thousands of stores, including nationally at Whole Foods. A few months later, founder Janie Hoffman was highlighted in a widely-read New York Times article about growing consumer demand for chia. Mamma Chia has since evolved into a platform brand that also markets snacks and other foods and is one of the leading brands in the chia space. Listen here!

It’s that time of year everyone – National Chia Day is THIS weekend! Did you know that Chia Seeds are one of THE MOST nutrient-rich foods on the planet!? They can easily be incorporated into almost every meal. We are also doing a giveaway which you can find all the details for at the bottom of this page!
Not too familiar with Chia Seeds? Below are some amazing facts about this tiny, but mighty superfood.
What is Chia?
Chia seeds come from the desert plant Salvia hispanica, which is a flowering member of the mint family and is native to North, Central, and South America. They have been enjoyed for thousands of years and can be traced all the way back to 3,000 B.C. where it was a staple of both Maya and Aztec diets. They believed one tablespoon of chia was capable of sustaining a warrior for 24 hours!
What are the health benefits of Chia?
Omega-3: They are extremely high in Omega-3, which is a polyunsaturated fat and is considered to be an essential fatty acid since it cannot be manufactured by the body. Studies have shown that Omega-3 fatty acids work to protect the heart by lowering blood pressure, bad cholesterol, and inflammation.
Dietary Fiber: Chia Seeds have both soluble and insoluble fiber, which can aid in digestion. The gelatinous texture that forms on the outside when the seeds are hydrated is the soluble fiber! Being rich in fiber content also helps people feel more full quicker and longer.
Complete Protein: Not only does it contain plant-based protein, but it also contains complete protein (aka whole protein)! Complete protein contains the desired proportion of all nine essential amino acid believed to be necessary for the dietary needs of humans.
Vitamins & Minerals: Chia seeds are also a source of calcium, iron, potassium, phosphorous, magnesium, and zinc!
Antioxidants: Research has shown that free radicals play a major role in disease formation and antioxidants reduce the effect of free radical damage, thus protecting healthy cells!
Hydration: When chia seeds are placed in water, they can swell up to 12x their normal size! Due to the extra retained H2O, consuming hydrated chia seeds can help you stay hydrated for a longer period of time.
Prebiotic: Prebiotic foods are high in special types of fiber that help to support digestive health. They are believed to promote the increase of friendly bacteria in the gut, help with various digestive problems, improve metabolic health, and even boost your immune system!
What can I do with Chia Seeds?
Chia pudding, chia water, chia muffins…the possibilities are endless! Powerhouse versatility makes it a welcome addition to any meal, snack, or beverage, wether it be a smoothie, parfait, salad – you name it!
Directions: Add all ingredients, mix well, store in refrigerator for 6-8 hours, top with fruit, and ENJOY!

Mamma Chia and ENLIGHTENED worked together to find 8 Surprisingly High-Fiber Snacks to help you keep your day fiber-filled.
What is fiber?
Although fiber might have a bad reputation (💩), a fiber deficiency can actually cause sluggishness, constipation, and even increase your risk of colon cancer. A commonly overlooked, but extremely important, element of a balanced diet, fiber reduces your risk of heart disease, lowers cholesterol and blood pressure, and can even aid weight loss. Fiber is commonly found in many fruits, vegetables, and high-fiber snacks. It helps to keep your digestive system running properly by breaking down and moving nutrients through your body, though it itself is not broken down or absorbed.
Know your fiber.
Fiber comes in two forms: soluble and insoluble. Soluble fiber (peas, beans, and oats) dissolves with water and lowers blood cholesterol and glucose levels. Insoluble fiber (whole wheat flour, nuts, and wheat bran) absorbs the water in your digestive tract, helping to move food through quickly.
How much fiber do you need?
Women need about 25 grams per day while men need closer to 38 grams. Many people choose to supplement their intake with high-fiber snacks that can be added between meals. Luckily there are many high-fiber snacks to choose from, including a few of which you might never have guessed. It’s common knowledge that prunes have a lot of fiber, but did you know that raspberries are also fiber-filled?
We’ve pulled together 8 surprising high-fiber snacks so that you can keep your body healthy and your snacks yummy!
Who knew raspberries were so high in fiber! 1 cup has a whopping 8 grams. Raspberries are delicious straight off the bush, but if you want something even sweeter, try these homemade raspberry popsicles.
ENLIGHTENED Ice Cream
That’s right, ice cream can actually be a high-fiber snack! Each serving of ENLIGHTENED Ice Cream has 5 grams of fiber, meaning if you eat the whole pint (and sometimes we do…) you can get 20 grams of fiber from your favorite frosty treat.
Split peas pack a ton of fiber with 16 grams per cup. They’re also great for pairing with other ingredients for a high-fiber snack, like this yellow split pea spread! (BTW a split pea is just a regular pea that’s been dried)
Artichokes are a super versatile vegetable, great in dips, salads, and roasted in the oven! Each artichoke has about 9 grams of fiber. Add this delicious artichoke and mushroom salad to your dinner to round out your fiber needs for the day.
Curious about the other 4 high-fiber snacks? Finish reading this post on ENLIGHTENED’s blog, and head over to our Instagram to find out how you can win a prize package from Mamma Chia and ENLIGHTENED! 🎉

Combine this pre-workout nutrition with a quick 5 minute ab routine and take your fitness regimen up a notch! Set time aside at the beginning or end of your workout and tighten your core with this speedy combo of exercises for tighter abs. This workout requires no extra equipment, so feel free to get your heart rate pumping wherever your day takes you!
First, warm up your body. Sit back into Child’s Pose to open your hips for a few breaths. Slowly rise to a tabletop position and flow through Cow and Cat Pose to warm up your back and begin to engage your core. Inhale as you drop your belly for Cow and exhale as you arch your back up to the sky, drawing your belly in for Cat. Move one breath to one movement until your body is ready for the core workout.
*Please listen to the wisdom of your body while attempting the following routine. Each movement will be performed non-stop for 1 minute without any pauses in between each exercise.
Return to a neutral tabletop position and extend one leg out straight behind you, one at a time, to set yourself up into a plank position. Shoulders will be stacked directly over wrists, belly button is drawn up and in towards your spine. Create a straight line with your body and tense your quads to fully engage your body. Have a clock or stopwatch handy to keep track of when you need to switch to the next ab exercise. Start the clock and one knee at a time begin to pull them in towards your chest, alternating each leg for 1 minute. Remember to keep a flat spine throughout this movement and to work at your own pace!
In this round, you will alternate between lifting the opposite arm with the opposite leg at the same time, while in a plank position and keeping your core pulled in tight. Begin by lifting your left arm and right leg at the same time until arm is shoulder height and leg is hip height. Switch arms and legs, lifting your right arm and left leg this time. Alternate between each side for 1 minute.
Side Plank Crunches
Lay on your right side and drop down onto your elbow, being mindful that your shoulder is stacked directly over your elbow with your fingertips pointing in the same direction that you are facing. Spin to the outside of your right ankle and stack the left ankle on top, lifting your hips up to the sky while pressing down with your palm. Extend your left arm overhead and lift the left leg up to match. Crunch your left elbow in to meet your left knee and extend back straight. Repeat this movement for 30 seconds then switch sides. Remember to try to not take any breaks in between transitioning.
Take a seat and slowly lower down onto your back one vertebrae at a time. Legs are extended straight, arms are stretched overhead. For 1 minute you will crunch up, bringing your knees in toward your chest as you rise up onto your sitting bones. Lift your heart forward rather than hunching your shoulders, allowing you to use all of your core strength to sit up. Make sure you aren’t using the weight of your arms to hoist you up and keep shins parallel to the sky as you lift.
Time to target your obliques! Return your back to the floor and extend your arms out to a “T” by your sides. Lift your legs back up if they aren’t already. Keeping your legs as straight as possible above your hips, alternate leaning your legs to the left and right. Remember to pause for a second in the middle before switching to the other side so you are in control and gentle on your lower back. Press into your palms to keep you grounded and stable.
After you’ve completed the ab workout flip over onto your belly and press yourself into Cobra pose to stretch your core and relieve it of the heat you created. Repeat this workout as much as you desire!
